Vitamins

Vitamins are organic compounds and essential nutrients meaning we cannot synthesise them, or to sufficient levels required for health, so can only obtain them through the diet. Vitamins are required for numerous essential processes including cofactors for enzyme activity producing cell energy (ATP), antioxidants that prevent damage from free radicals and hormone function and bone health like Vitamin D. Vitamins can be stored in the body if they are fat-soluble (including Vitamins A, D and E) or are excreted from the body if not utilised such as the water soluble vitamins (B vitamins and Vitamin C). Diets that are limited in fruit and vegetables and other whole foods may not deliver the requisite levels of vitamins, and other nutrients, for health, and food processing and cooking reduces vitamin status of food.
